Creamy Tomato Basil Soup

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, diced
  • 1 cup vegetable broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar
  • 1/4 cup fresh basil, chopped
  • 1/2 cup heavy cream

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, and sauté until soft.
  2. Add the diced tomatoes, broth, salt, pepper, and sugar. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in chopped basil and heavy cream. Blend the soup until smooth, and then heat through.
  4. Serve hot, garnished with additional basil if desired.

Notes

  • For a vegan version, substitute heavy cream with coconut cream.
  • Add a pinch of red pepper flakes for a spicy kick.
