Zucchini Orzo

Delicious zucchini orzo dish featuring turkey bacon and a medley of vegetables for a comforting meal.

Ingredients

  • 1 cup orzo pasta
  • 2 medium zucchini, diced
  • 4 slices turkey bacon, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook orzo according to package instructions; drain.
  2. In a skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  3. Add onions and garlic to the skillet; sauté until soft.
  4. Stir in zucchini and cherry tomatoes, cooking until tender.
  5. Add the cooked orzo and Italian seasoning; mix well and season with salt and pepper.
  6. Serve warm.

Notes

  • Feel free to add other vegetables like bell peppers or spinach.
  • This dish can easily be made vegetarian by omitting the turkey bacon.
