  • 1 cup white chocolate chips
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, sugars, and butter until smooth.
  3. Add in the egg and mix until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Fold in the white chocolate chips.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a different flavor, you can substitute dark chocolate for white chocolate.
  • Make sure not to overbake for soft snickerdoodles.
