  • 1 pound salmon fillets
  • 20 rice paper wrappers
  • 1 cup vermicelli noodles
  • 2 cups mixed lettuce
  • 1 cup shredded carrots
  • 1 bunch fresh mint leaves
  • 1 bunch fresh cilantro
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 lime, juiced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the salmon with soy sauce, sesame oil, and lime juice. Bake for 12-15 minutes.
  3. Meanwhile, cook the vermicelli noodles according to package instructions and set aside.
  4. Soak the rice paper wrappers in warm water until soft.
  5. On a rice paper wrapper, layer with lettuce, noodles, carrots, salmon, mint, and cilantro. Roll tightly.
  6. Repeat for remaining wrappers and ingredients.
  7. Serve with dipping sauce.
