  • 1 cup brown sugar

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the pumpkin puree, brown sugar, and granulated sugar until well combined.
  3. Add the softened butter, egg, and vanilla extract; mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 12-15 minutes or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a spicier cookie, add more cinnamon or pumpkin spice.
