Sweet Corn Risotto

A creamy and delicious risotto made with sweet corn and turkey bacon for a delightful comfort food experience.

Ingredients

  • 1 cup arborio rice
  • 4 cups chicken broth
  • 2 ears of sweet corn, kernels removed
  • 4 ounces turkey bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion and garlic, sauté until onion is translucent.
  3. Stir in arborio rice, cooking for about 2 minutes.
  4. Gradually add chicken broth, one cup at a time, stirring frequently until absorbed.
  5. Once rice is creamy and al dente, stir in corn, Parmesan cheese, and butter.
  6. Season with salt and pepper to taste.
  7. Serve warm and enjoy!

Notes

  • For creamier risotto, add a splash of white wine with the broth.
  • You can substitute regular bacon if preferred.
