- 4 cups chicken broth
- 2 ears of sweet corn, kernels removed
- 4 ounces turkey bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 tablespoon butter
- Salt and pepper to taste
- In a large skillet, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
- Add onion and garlic, sauté until onion is translucent.
- Stir in arborio rice, cooking for about 2 minutes.
- Gradually add chicken broth, one cup at a time, stirring frequently until absorbed.
