Summer Berry and Peach Cheesecake

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups mixed summer berries (strawberries, blueberries, raspberries)
  • 2 ripe peaches, sliced

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
  3. In another bowl, beat the cream cheese until smooth, then mix in the sour cream and sugar.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Pour the cheesecake mixture over the crust.
  6. Bake for 50-55 minutes, or until the center is just set.
  7. Remove from the oven and let it cool. Top with mixed berries and slices of peach before serving.

Notes

  • Allow the cheesecake to chill in the refrigerator for at least 4 hours before serving for best texture.
  • Fresh berries work best, but frozen berries can be used if needed.
