- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1/2 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups mixed summer berries (strawberries, blueberries, raspberries)
- 2 ripe peaches, sliced
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
- In another bowl, beat the cream cheese until smooth, then mix in the sour cream and sugar.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Pour the cheesecake mixture over the crust.
- Bake for 50-55 minutes, or until the center is just set.
- Remove from the oven and let it cool. Top with mixed berries and slices of peach before serving.
Notes
- Allow the cheesecake to chill in the refrigerator for at least 4 hours before serving for best texture.
- Fresh berries work best, but frozen berries can be used if needed.
