  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 1/4 cup olive oil
  • 1 lemon juiced
  • 4 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a small bowl, mix together the cumin, coriander, paprika, turmeric, garlic powder, onion powder, cayenne pepper, and salt.
  2. In a large bowl, combine the chicken thighs, olive oil, lemon juice, and minced garlic. Add the spice mixture and coat the chicken well.
  3. Place the chicken in a slow cooker and cook on low for 6-7 hours, or until tender.
  4. Once cooked, shred the chicken with two forks and stir in the fresh parsley.
