Quick Vegetarian Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 1 cup green beans, trimmed
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup fresh spinach

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery, and sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add diced tomatoes, broth, potatoes, green beans, thyme, and paprika.
  5. Bring to a boil, then reduce heat and simmer until vegetables are tender.
  6. Season with salt and pepper, then stir in spinach before serving.
