Quick & Healthy Egg Muffins with Spinach and Feta

A quick and healthy recipe for egg muffins packed with spinach and feta.

Ingredients

  • 6 eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, salt, and pepper.
  3. Add in the chopped spinach, feta cheese, and turkey bacon, stirring until well combined.
  4. Grease a muffin tin and pour the mixture evenly into each muffin cup.
  5. Bake for 20-25 minutes or until the muffins are set and lightly golden.
  6. Let them cool slightly, then remove from the muffin tin.

Notes

  • Best served warm, but can be stored in the fridge for meal prep.
  • Feel free to substitute the feta with your cheese of preference.
