- 1 pound green beans
- 2 cups diced potatoes
- 4 slices turkey bacon
- 1/4 cup red onion, diced
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
- Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
- In a skillet, cook turkey bacon until crispy. Remove and chop into pieces.
- Blanch green beans in boiling water for 2-3 minutes, then transfer to an ice bath.
- In a large bowl, combine potatoes, green beans, turkey bacon, and red onion.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
- Pour dressing over the salad and mix gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
