Quick Green Bean Potato Salad

A quick and refreshing salad made with green beans, potatoes, and turkey bacon.

Ingredients

  • 1 pound green beans
  • 2 cups diced potatoes
  • 4 slices turkey bacon
  • 1/4 cup red onion, diced
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 10-15 minutes. Drain and let cool.
  2. In a skillet, cook turkey bacon until crispy. Remove and chop into pieces.
  3. Blanch green beans in boiling water for 2-3 minutes, then transfer to an ice bath.
  4. In a large bowl, combine potatoes, green beans, turkey bacon, and red onion.
  5. In a separate bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.
  6. Pour dressing over the salad and mix gently to combine.
  7. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For added flavor, you can include cherry tomatoes.
  • This salad is best served cold.
