Pumpkin Whipped Feta Dip

Ingredients

  • 1 cup pumpkin puree
  • 8 oz feta cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a medium bowl, combine pumpkin puree, feta cheese, Greek yogurt, olive oil, minced garlic, paprika, salt, and black pepper.
  2. Use a hand mixer to blend until smooth and creamy.
  3. Fold in chopped parsley.
  4. Transfer to a serving bowl and drizzle with olive oil.
  5. Serve with crackers or vegetables.

Notes

  • For a spicier dip, add a pinch of cayenne pepper.
  • Can be made a day in advance.
