  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1 ½ cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs, one at a time, and then stir in the vanilla extract.
  5. Gradually blend in the dry mixture until just combined.
  6. Drop tablespoon-sized amounts of dough onto a baking sheet.
  7. Bake for 12-15 minutes or until golden brown.
  8. Let cool before frosting.
  9. For the frosting, beat cream cheese and powdered sugar until smooth, then mix in vanilla extract.
  10. Frost cooled cookies with cream cheese frosting.
