  • 1 cup potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions and garlic, sauté until translucent.
  3. Add the carrots, celery, and potatoes, stirring for a few minutes.
  4. Pour in the vegetable broth, and bring to a boil.
  5. Reduce heat and let it simmer until the vegetables are tender.
