One Pot Creamy Cajun Chicken Pasta

A deliciously creamy and spicy cajun chicken pasta made in one pot for an easy dinner option.

  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 tablespoon cajun seasoning
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 15 ounces diced tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated parmesan cheese
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cajun seasoning, cooking until chicken is browned.
  3. Stir in bell pepper and garlic, cooking for another 2-3 minutes.
  4. Add diced tomatoes, heavy cream, chicken broth, and fettuccine to the pot.
  5. Bring to a boil, then reduce heat and cover, cooking for about 12-15 minutes or until pasta is tender.
  6. Stir in parmesan cheese and parsley before serving.

Notes

  • For less spice, reduce the amount of cajun seasoning.
