Old-School Squash Casserole

A warm and comforting dish perfect for any family meal.

Ingredients

  • 4 cups sliced yellow squash
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup crushed crackers
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the squash and onion until tender.
  3. In a bowl, combine the sautéed squash, cheese, crushed crackers, eggs, milk, butter, salt, and pepper.
  4. Pour the mixture into a greased baking dish.
  5. Bake for 30-35 minutes or until golden brown.

Notes

  • Feel free to add other vegetables for extra flavor.
  • Can be made ahead and reheated.
