  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 egg
  • 1 lemon (juice and zest)
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, breadcrumbs, parmesan cheese, garlic, oregano, salt, pepper, parsley, egg, and lemon zest.
  3. Form the mixture into small balls and place them on a baking sheet.
  4. Bake the meatballs for 25-30 minutes until cooked through.
  5. In a saucepan, combine chicken broth and lemon juice. Bring to a simmer.
  6. Add the cooked meatballs to the sauce and let simmer for 5 minutes.
  7. Serve warm, garnished with additional parsley if desired.
