- 4 large russet potatoes
- 1 cup black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1 teaspoon taco seasoning
- 2 tablespoons olive oil
- 1/4 cup chopped fresh cilantro
- 1 jalapeño, diced (optional)
- Preheat the oven to 400°F (200°C).
- Wash and poke holes in the russet potatoes, then rub them with olive oil and sprinkle with salt.
