  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1 teaspoon taco seasoning
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeño, diced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and poke holes in the russet potatoes, then rub them with olive oil and sprinkle with salt.
  3. Bake the potatoes in the oven for about 45-60 minutes or until they are tender.
  4. While the potatoes bake, prepare the toppings by mixing black beans, corn, diced tomatoes, and taco seasoning in a bowl.
  5. Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes.
