  • 2 pounds flank steak
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix ricotta, mozzarella, Parmesan, parsley, garlic, salt, pepper, and red pepper flakes.
  3. Lay the flank steak flat, and spread the cheese mixture evenly over the top.
  4. Roll the steak tightly and secure with kitchen twine.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat.
  6. Sear the steak on all sides until browned.
  7. Transfer the skillet to the oven and bake for 25-30 minutes, or until desired doneness.
  8. Let rest for 10 minutes before slicing.
