- 4 large potatoes, diced
- 1 cup cheddar cheese, shredded
- 1/2 cup turkey bacon, cooked and crumbled
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer until potatoes are tender.
- Stir in the heavy cream, cheddar cheese, turkey bacon, thyme, salt, and pepper. Cook until cheese is melted and well blended.
- Adjust seasoning to taste and serve hot.
Notes
- For a thicker soup, blend part of the soup using an immersion blender.
- Garnish with fresh herbs or more cheddar cheese if desired.
