Hearty Cheddar Garlic Herb Potato Soup Recipe

A delicious and comforting hearty cheddar garlic herb potato soup infused with the flavors of turkey bacon.

Ingredients

  • 4 large potatoes, diced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add the diced potatoes and chicken broth. Bring to a boil and then reduce heat to simmer until potatoes are tender.
  3. Stir in the heavy cream, cheddar cheese, turkey bacon, thyme, salt, and pepper. Cook until cheese is melted and well blended.
  4. Adjust seasoning to taste and serve hot.

Notes

  • For a thicker soup, blend part of the soup using an immersion blender.
  • Garnish with fresh herbs or more cheddar cheese if desired.
