Hearty Cheddar Garlic Herb Potato Soup Recipe

This hearty soup combines the rich flavors of cheddar cheese, garlic, and herbs with the texture of potatoes and the savory goodness of turkey bacon.

Ingredients

  • 4 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon fresh thyme
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy, then remove and crumble.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes and chicken broth to the pot. Bring to a boil and simmer until potatoes are tender.
  4. Stir in heavy cream, cheddar cheese, thyme, and crumbled bacon. Cook until cheese is melted and soup is heated through.
  5. Season with salt and pepper to taste. Serve warm.

Notes

  • For a thicker soup, blend part of the soup and return it to the pot.
  • Can be topped with extra cheese and green onions.
