Hearty Cheddar Garlic Herb Potato Soup Recipe

A rich and creamy potato soup flavored with cheddar cheese, garlic, and herbs, topped with crispy turkey bacon.

Ingredients

  • 4 large potatoes
  • 1 small onion
  • 3 cloves garlic
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 6 slices turkey bacon
  • 2 tablespoons fresh chives
  • 1 teaspoon dried thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onions and garlic until translucent.
  3. Add diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
  4. Puree the soup using an immersion blender or regular blender.
  5. Stir in the cream, cheddar cheese, thyme, salt, and pepper. Cook until cheese melts.
  6. Serve topped with crispy bacon and chives.

Notes

  • For a vegetarian option, omit the turkey bacon.
  • Can add more cheese for extra creaminess.
