- 4 large potatoes
- 1 small onion
- 3 cloves garlic
- 4 cups chicken broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 6 slices turkey bacon
- 2 tablespoons fresh chives
- 1 teaspoon dried thyme
- Salt to taste
- Pepper to taste
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- In the same pot, sauté onions and garlic until translucent.
- Add diced potatoes and chicken broth. Bring to a boil and simmer until potatoes are tender.
- Puree the soup using an immersion blender or regular blender.
- Stir in the cream, cheddar cheese, thyme, salt, and pepper. Cook until cheese melts.
- Serve topped with crispy bacon and chives.
Notes
- For a vegetarian option, omit the turkey bacon.
