  • 4 strips turkey bacon
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/4 cup Greek yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions; drain and let cool.
  2. In a skillet, cook turkey bacon until crispy; chop into pieces.
  3. In a large bowl, combine the cooled pasta, chopped turkey bacon, cucumber, cherry tomatoes, red onion, feta, and olives.
  4. In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
