Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup honey
  • 1/2 cup Greek yogurt
  • 1/4 cup coconut oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the flour, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey, Greek yogurt, coconut oil, and eggs.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fold in the blueberries.
  6. Pour the batter into a muffin tin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.

Notes

  • For added sweetness, you can sprinkle raw sugar on top before baking.
  • These muffins can be frozen for up to 3 months.
