Healthy Banana Oatmeal Muffins

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the bananas until smooth.
  3. Add the rolled oats, almond milk, honey, baking powder, baking soda, cinnamon, and salt to the mashed bananas and mix well.
  4. If using, fold in the chopped walnuts.
  5. Pour the batter into a muffin tin lined with paper liners.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes
