  • 2 pounds ripe tomatoes
  • 1 medium onion
  • 4 cloves garlic
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the tomatoes, onion, and garlic, and toss them with olive oil, salt, and pepper.
  3. Spread them on a baking sheet and roast for 30 minutes.
  4. Once roasted, blend the mixture in a blender until smooth.
  5. Add the heavy cream and basil, and blend again until well combined.
