Gnocchi Zuppa Toscana

A comforting and hearty Italian soup featuring gnocchi and turkey bacon, perfect for chilly evenings.

Ingredients

  • 1 pound gnocchi
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and chop.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the chicken broth and bring to a simmer.
  4. Add the gnocchi and cook until they float to the top.
  5. Stir in the chopped kale and let it wilt.
  6. Reduce heat and mix in the heavy cream and Italian seasoning.
  7. Add the chopped turkey bacon back to the pot and season with salt and pepper.
  8. Serve hot, garnished with additional kale if desired.

Notes

  • For a spicier soup, add red pepper flakes.
  • Feel free to substitute turkey bacon with regular bacon if preferred.
