  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 cup mushrooms, sliced
  • 2 green onions, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon red pepper flakes

Instructions

  1. In a large pot, heat the chicken broth over medium heat.
  2. Add the diced chicken, carrots, and onion. Cook until the chicken is no longer pink.
  3. Stir in the garlic, ginger, and mushrooms, cooking for an additional 2 minutes.
