  • 4 large russet potatoes
  • 4 strips turkey bacon
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/4 cup green onions, sliced for garnish

Instructions

  1. In a large pot over medium heat, cook the turkey bacon until crispy. Remove and crumble.
  2. In the same pot, add onions and garlic, sauté until softened.
  3. Add diced potatoes and chicken broth, bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
