  • 12 ounces rigatoni pasta
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook rigatoni pasta according to package instructions; drain and set aside.
  2. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and chop.
  3. In the same skillet, add olive oil, onion, and garlic. Sauté until onions are translucent.
  4. Add diced tomatoes, heavy cream, and Italian seasoning. Simmer for 5 minutes.
  5. Stir in cooked rigatoni and bacon. Season with salt and pepper.
  6. Mix in the Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil.

Notes

  • For a vegetarian version, omit the turkey bacon.
  • This dish can be made ahead and reheated.
