  • 6 slices turkey bacon
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup sauerkraut, drained
  • 2 cups shredded cooked chicken ham
  • 1 cup heavy cream
  • 1 teaspoon caraway seeds
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add chicken broth, sauerkraut, and chicken ham to the pot. Bring to a boil.
  4. Stir in heavy cream and caraway seeds, then return to a simmer.
  5. Season with salt and pepper. Serve hot, garnished with crumbled turkey bacon.

Notes

  • For a vegetarian option, substitute turkey bacon with smoked tofu.
  • This soup can be made in advance and reheats well.
