Cinnamon Swirl Rhubarb Bread

A deliciously sweet and tangy bread featuring cinnamon and rhubarb.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup chopped rhubarb
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine the flour, baking powder, baking soda, cinnamon, and salt; gradually add to the creamed mixture.
  5. Fold in the chopped rhubarb.
  6. Pour into a greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool before slicing.

Notes

  • For an extra kick, add a pinch of nutmeg.
  • Serve with a drizzle of icing for sweetness.
