Cinnamon Swirl Pumpkin Bread Mini Loaves

Deliciously moist pumpkin bread with a sweet cinnamon swirl.

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar (for cinnamon swirl)
  • 1 teaspoon ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
  3. Add in eggs and mix until smooth.
  4. In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. In a small bowl, mix brown sugar and cinnamon for the swirl.
  7. Pour half of the batter into greased mini loaf pans, followed by a sprinkle of the cinnamon mixture. Add the remaining batter and top with the rest of the cinnamon mixture.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Allow to cool before removing from pans.

Notes

  • For extra moistness, add a few tablespoons of milk to the batter.
  • Serve with butter for added flavor.
