- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/3 cup vegetable oil
- 2 large eggs
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 cup brown sugar (for cinnamon swirl)
- 1 teaspoon ground cinnamon (for cinnamon swirl)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil.
- Add in eggs and mix until smooth.
- In another bowl, mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- In a small bowl, mix brown sugar and cinnamon for the swirl.
- Pour half of the batter into greased mini loaf pans, followed by a sprinkle of the cinnamon mixture. Add the remaining batter and top with the rest of the cinnamon mixture.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool before removing from pans.
Notes
- For extra moistness, add a few tablespoons of milk to the batter.
- Serve with butter for added flavor.
