- 3 ripe bananas
- 1/2 cup melted butter
- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, mash the bananas with a fork.
- Add melted butter, sugar, egg, and vanilla to the mashed bananas and mix well.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and stir until just combined.
- In a separate bowl, combine sugar and cinnamon for the swirl topping.
- Layer half of the banana batter in a greased loaf pan, sprinkle with half of the cinnamon sugar mix, and repeat the layers.
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let cool before slicing and serving.
