- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons sugar
- 3 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon ground cinnamon
- Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, beating well after each addition, then add vanilla extract and cinnamon.
- Pour the cheesecake mixture over the crust and smooth the top.
- Bake for 50-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour, then refrigerate for at least 4 hours or overnight.
- Before serving, sprinkle more cinnamon and sugar on top if desired.
