  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups heavy cream
  • 8 ounces bittersweet chocolate
  • 1 teaspoon instant espresso powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan, melt the butter and sugar until smooth over medium heat.
  3. Remove from heat and stir in eggs, one at a time, followed by the flour, cocoa powder, vanilla, and salt until everything is well combined.
  4. Pour the brownie batter into the prepared pan and spread evenly.
  5. Bake for about 25 minutes or until a toothpick inserted comes out with a few crumbs.
  6. Let the brownies cool completely on a wire rack.
  7. For the mousse, melt the bittersweet chocolate and mix with espresso powder until smooth. Set aside to cool.
  8. In a separate bowl, whip the heavy cream to soft peaks and gently fold in the cooled chocolate mixture.
  9. Spread the mousse on top of the cooled brownies and refrigerate for at least 2 hours before serving.
