Chickpea Feta Avocado Salad

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup feta cheese, crumbled
  • 2 ripe avocados, diced
  • 1 cucumber, chopped
  • 1 red bell pepper, diced
  • ½ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt to taste

Instructions

  1. In a large bowl, combine the chickpeas, feta cheese, avocados, cucumber, red bell pepper, red onion, and parsley.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
