  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen cherries, pitted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients, stirring gently until just combined.
  5. Fold in the cherries carefully.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool slightly before serving.

Notes

  • For added flavor, consider adding almond extract along with the vanilla.
  • Use fresh cherries for the best results, but frozen can work in a pinch.
