  • 1 cup grated carrots

  • 1 teaspoon baking powder

  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas and then mix in the grated carrots.
  3. Add the sugars, oil, eggs, and vanilla extract, stirring until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. If desired, fold in walnuts and raisins.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
