Breakfast Egg Muffins

A delicious and simple recipe for breakfast egg muffins featuring turkey bacon and chicken ham.

Ingredients

  • 6 eggs
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1/2 cup shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk the eggs and add salt and pepper.
  3. Stir in the turkey bacon, chicken ham, bell pepper, onion, and cheese.
  4. Grease a muffin tin and pour the egg mixture evenly into each cup.
  5. Bake for 20-25 minutes or until the muffins are set.
  6. Allow to cool slightly before removing from the tin.

Notes

  • These muffins can be stored in the refrigerator for up to 5 days.
  • Reheat in the microwave for a quick breakfast.
