Blueberry Oatmeal Muffins

  • 1 cup rolled oats
  • 1 cup milk
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a bowl, combine rolled oats and milk. Let it sit for 10 minutes.
  3. Add honey or maple syrup, applesauce, and vanilla extract to the oats mixture, and stir until combined.
  4. In another bowl, mix the whole wheat flour, baking powder, baking soda, and salt.
  5. Combine the wet and dry ingredients until just mixed. Gently fold in the blueberries.
  6. Fill the muffin cups about 2/3 full with the batter.
  7. Bake for 20-25 minutes, or until a toothpick comes out clean.
  8. Let cool in the pan for 5 minutes before transferring to a wire rack.

Notes

  • For extra sweetness, you can add a handful of chocolate chips.
  • Feel free to substitute other fruits if blueberries aren’t available.
