Bihun Goreng Fried Vermicelli

  • 200 grams bihun (vermicelli)
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, sliced
  • 1 carrot, julienned
  • 100 grams cabbage, shredded
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 1 teaspoon ground black pepper
  • 2 green onions, chopped

Instructions

  1. Soak the bihun in warm water for about 10 minutes or until soft, then drain.
  2. In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and sliced onion, and sauté until fragrant.
  3. Add the carrots and cabbage, and cook for 3–4 minutes until vegetables are tender.
  4. Push the vegetables to one side of the pan and pour in the beaten eggs. Scramble the eggs until cooked, then mix with the vegetables.
  5. Add the softened bihun to the pan along with the soy sauce and ground black pepper. Toss everything together until well combined.
  6. Finally, add the chopped green onions, stir, and serve hot.

Notes

  • This dish can be customized with your choice of protein, such as chicken or shrimp.
  • For a spicier version, add chili paste or sliced fresh chilies.
