Bacon Cheddar Gnocchi Soup – A Rich and Creamy Comfort Meal

Ingredients

  • 4 cups chicken broth
  • 1 pound gnocchi
  • 6 strips bacon
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream
  • 1 cup diced potatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, cook the bacon until crispy. Remove bacon and set aside.
  2. In the bacon grease, sauté the onion and garlic until translucent.
  3. Add the broth and diced potatoes. Bring to a simmer and cook until potatoes are tender.
  4. Add the gnocchi and cook until they float.
  5. Stir in the heavy cream and cheddar cheese until melted.
  6. Crumble the bacon and add back to the pot.
  7. Season with thyme, salt, and pepper. Serve hot.

Notes

  • This soup is best served fresh but can be refrigerated for up to 3 days.
  • Reheat on low heat to prevent curdling.
