Bacon Cheddar Gnocchi Soup – A Rich and Creamy Comfort Meal

Ingredients

  • 4 ounces bacon, chopped
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound gnocchi
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, sautéing until translucent.
  3. Add chicken broth and bring to a boil.
  4. Add gnocchi and cook according to package instructions.
  5. Reduce heat and stir in heavy cream, cheddar cheese, and spinach.
  6. Season with salt and pepper, add the cooked bacon back in, and serve hot.

Notes

  • This soup is best served immediately but can be stored in the fridge for up to 3 days.
  • Reheat gently on the stove before serving again.
