  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 cup unsweetened apple cider
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
  4. Add the eggs and vanilla extract, mixing well.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the apple cider.
  6. Drop tablespoon-sized amounts of the batter onto the prepared baking sheet.
  7. Bake for 10-12 minutes, then allow to cool completely.
  8. For the filling, beat together cream cheese, powdered sugar, and milk until smooth.
  9. Spread filling on the flat side of one cookie and sandwich with another cookie.
  10. Serve and enjoy your delicious whoopie pies!

Notes
