- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup unsweetened apple cider
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese, softened
- 1 cup powdered sugar
- 1 tablespoon milk
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until fluffy.
- Add the eggs and vanilla extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, alternating with the apple cider.
- Drop tablespoon-sized amounts of the batter onto the prepared baking sheet.
- Bake for 10-12 minutes, then allow to cool completely.
- For the filling, beat together cream cheese, powdered sugar, and milk until smooth.
- Spread filling on the flat side of one cookie and sandwich with another cookie.
