A delicious and healthy Air Fryer BBQ Chicken & Sweet Potato Bowl that combines juicy chicken with perfectly cooked sweet potatoes.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the air fryer to 380°F (190°C).
  2. Season the chicken with olive oil, salt, pepper, garlic powder, and paprika.
  3. Place the chicken in the air fryer and cook for 12-15 minutes, flipping halfway through.
  4. While the chicken is cooking, peel and dice the sweet potatoes into 1-inch cubes.
  5. Toss the sweet potatoes with olive oil, salt, and pepper, then place in the air fryer after the chicken is cooked. Fry for 15-20 minutes until tender.
  6. Once the chicken is done, brush with BBQ sauce and cook for an additional 2-3 minutes.
  7. Remove everything from the air fryer and let rest for a few minutes before serving.
  8. Serve the BBQ chicken on a bed of sweet potatoes and garnish with parsley.

Notes

  • Adjust the BBQ sauce based on your taste preferences.
  • You can add other vegetables if you like.
