- 2 boneless, skinless chicken breasts
- 1 cup BBQ sauce
- 2 medium sweet potatoes
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon chopped fresh parsley
- Preheat the air fryer to 380°F (190°C).
- Season the chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Place the chicken in the air fryer and cook for 12-15 minutes, flipping halfway through.
- While the chicken is cooking, peel and dice the sweet potatoes into 1-inch cubes.
- Toss the sweet potatoes with olive oil, salt, and pepper, then place in the air fryer after the chicken is cooked. Fry for 15-20 minutes until tender.
- Once the chicken is done, brush with BBQ sauce and cook for an additional 2-3 minutes.
- Remove everything from the air fryer and let rest for a few minutes before serving.
- Serve the BBQ chicken on a bed of sweet potatoes and garnish with parsley.
